Iced Gingerbread Oatmeal Cookies

These lightly iced gingerbread oatmeal cookies are chewy, soft and brimming with seasonal flavors! With Molasses, ginger, cinnamon, nutmeg and cloves, your kitchen will be smelling incredible for days!

 

These are a favorite cookie of mine for the holidays! I love a iced cookie and these hit the spot for cookie exchanges too.

Ingredients

Scale

Cookies:

2 Cups Oatmeal

1 2/3 cups of flour

1 tsp baking soda

2 tsp ground ginger

1 1/2 tsp of ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground cloves

3/4 cup butter

1 cup light or dark brown sugar

1/4 cup sugar

1 large egg

1/4 cup of molasses

Icing:

1 1/2 cups of confectioners sugar

1/4 tsp pure vanilla extract

12 Tbsp Milk

small pinch of ground cinnamon and ground ginger, plus extra cinnamon for garnish if desired.

Instructions

Combine ingredients for cookie base and mix together in a mixer. Beat for 2 minutes.

Let sit in the refridgerator 45 minutes before baking.

Scoop cookies onto a cookie sheet..golf ball size. Bake at 350 degrees for 12-13 minutes, bang cookie sheet on the counter to flatten the cookies. Let cool.

Combine icing ingredients, dip the tops of the cookies and let it harden.
