Cheesy HashBrown Potato Casserole

This amazing Hashbrown Potato Casserole is perfect for big gatherings or cut in half for a regular dinner side dish. One of my favorites for Thanksgiving or Christmas! Note, I made a double batch of this to feed 12 people. If you want to cut it in half, simply cut ingredients in half and use a 9×9 inch pan.

Ingredients

2 Packages Simply Potatoes Hashbrowns

2 Cans of Cream of Chicken Soup

1 3/4 cup of sour cream

4 cups of shredded cheddar cheese

1/2 cup of melted butter

1/4 cup chopped onion

Topping:

3 cups of crushed cornflakes

4 Tbsp of melted butter

Instructions

Combine casserole ingredients and place in a greased 9×13 deep dish pan. Crush Cornflakes and add butter, sprinkle over the top of the casserole. Bake 1 hour at 350 degrees. Can be made ahead, refrigerate until ready to cook.
